Recipe for Pulled Pork by a Texan

Main ingredients:

2 1/2 pound of pork roast

1 teaspoon of vegetable oil/ olive oil

 

Pork Rub:

3 tablespoons of paprika

2 tablespoons of salt

1 tablespoon of ground pepper.

2 teaspoons of garlic powder

2 teaspoons of  cayenne or chili pepper

2 teaspoon of onion powder

2 teaspoons of garlic powder

2 teaspoons of cumin

2 teaspoons of celery

2 teaspoons of turmeric

2 teaspoons oregano

 
  1. Place Pork roast in a small ziplock bag 

  2. Combine ingredients for pork rub in a small bowl and mix thoroughly.

  3.  Put ½ cup of the seasoning into the ziplock bag with the pork (The rest of the seasoning can be used up to 3 months)

  4. Add a couple teaspoons of olive oil 

  5. Let pork rest overnight
     

    Take out pork and place it in a dutch oven ( see picture below) with a metal rack on the bottom.

    Then preheat at 350 degrees fahrenheit 

     

    For barbecue sauce:

    ½ cup of apple cider vinegar

    ½ cup of chicken broth

    ½ cup brown sugar

    1 tablespoon of ground mustard

    1 tablespoon of worcester sauce

    1 tablespoon of chili powder

    1 large sliced onion

    2 cloves of garlic

    1 ½ teaspoon of thyme

     

     

  6. Combine onion, garlic and spices in a large bowl. Then add liquid ingredients: apple cider vinegar, chicken broth, worcester  and mustard.

  7.  Finally add the brown sugar. 

  8. Then mix all ingredients together. 

  9. Pour half of the sauce in the bottom of the dutch oven with ½ cup of water.

  10. Then put pork roast in the oven for about  60 minutes. 

  11. Take the pork out of the oven and let it rest for 10  to 20 minutes.

    Then light up the smoker/ grill. (We have a green egg manufactured in Georgia. I would highly recommend that grill.)
    Place the pork and the dutch oven on the grill. If your pan can not handle the heat then place it in aluminium foil. 


     

  12. Keep in mind that for every 1.5 pound of pork,  it will take about 90 minutes to 120 minutes.\

  13. Keep slathering the remaining  BBQ sauce on the pork, so it doesn’t get dry.

  14. Heat the grill to 300 degrees Fahrenheit and keep it at this temperature for 60 minutes. 

  15. Then drop the temperature to 250 degrees Fahrenheit for the remaining time. 

  16. Once pork is done (it will look pinkish white) transfer on to a platter and serve with complementing sides.
     

    My favorite is some type of sandwich bread.
